Morning Glory Muffin Bars Recipe

Ingredients

  • 1 1/2 c. whole wheat flour
  • 1 1/2 c. 100% Bran cereal or possibly All Bran
  • 1/4 c. toasted sesame seeds (Just throw them in frying pan)
  • 1 Tbsp. baking pwdr
  • 1 tsp cinnamon
  • 1 tsp allspice optional
  • 1/2 tsp baking soda
  • 1 pch salt
  • 1 x egg
  • 3/4 c. buttermilk or possibly lf yogurt
  • 1/2 c. brown sugar
  • 1/3 c. vegetable oil or possibly sub applesauce
  • 2 Tbsp. molasses or possibly honey
  • 1 1/2 c. carrots grated
  • 1/2 c. dates minced
  •     or possibly raisins or possibly apple

Directions

  1. Combine all the dry ingredients (except raisins and carrots) in a large bowl. In another bowl whisk together the egg, sugar, buttermilk/yogurt, mollasses, oil. Add in to the dry stuff. Mix till moist. Add in carrot and raisins. Bake at 350 for 25-30 min. Either makes 12 muffins or possibly 24 bars (based on a 13x9 pan). Each bar has 119 and 4g of fat. However, the fat can be reduced by substituting apple sauce. Which is what I did and the results were very good! I would keep in an airtight container in the fridge.
  2. [I posted a recipe for "Morning Glory Muffin BArs" that use only 1/2 a c. of brown sugar but they also dry out quickly. Today I doubled the applesauce and added to cut up apples which solved tha moisture problem and well I did not add in as much sugar. I think you could get away without any sugar in this recipe. The recipe either makes 12 muffins or possibly 24 bars.
