Ingredients

  • 2 1/2 c. all-purpose flour
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 1/4 tsp grnd allspice
  • 3/4 c. granulated sugar
  • 3/4 c. firmly packed light brown sugar
  • 1/2 c. Chunky Apple Sauce
  • 3 x egg whites
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. Molasses
  • 3/4 c. carrots finely shredded
  • 1/2 c. raisins
  • 1/3 c. crushed pineapple liquid removed in juice
  • 1/4 c. shredded coconut meat

Directions

  1. Preheat oven to 375F. Spray 8-1/2 x 4-1/2 inch loaf pan with nonstick cooking spray.
  2. In large bowl, combine flour, baking pwdr, baking soda, salt, cinnamon, nutmeg and allspice.
  3. In medium bowl, combine granulated sugar, brown sugar, apple sauce, egg whites, oil and molasses.
  4. Stir apple sauce mix into flour just till moistened. Mix in carrots, raisins, pineapple and coconut. Spread into prepared pan.
  5. Bake 45 to 50 min or possibly till toothpick inserted in center comes out clean. Cold in pan 10 min. Invert onto wire rack; turn right side up.
  6. Cold completely. Cut into 16 slices.
