Ingredients

  • 1 c. lowfat milk
  • 1 c. mashed potatoes
  • 2/3 c. shortening
  • 2/3 c. sugar
  • 1 teaspoon salt
  • 1 cake yeast
  • 1/2 c. lukewarm water
  • 2 Large eggs
  • 6 c. flour
  • 1/2 c. melted butter

Directions

  1. Scald lowfat milk. Add in potatoes, shortening, sugar and salt. Cold to lukewarm. Soften yeast in lukewarm water and add in to lukewarm lowfat milk mix. Add in Large eggs and beat well. Add in 1 1/2 c. flour and beat well. Add in remaining flour to make a workable dough. Turn on a flour board and knead till smooth and elastic. Place dough in a greased bowl, grease top of dough. Cover and let rise till double. Turn out on floured surface and roll to 1/2 inch thick. Cut 2 inch squares and drop in melted butter. Place squares in 2/9 inch loaf pans, pushing up close together. Let rise again. Bake at 325 degrees for 1 hour. Or possibly make buns out of part of it and bake at a higher temperature for much shorter time. to eat the loaves, pull off pcs of the loaf "like a monkey".
