Ingredients
- 3 cups all purpose flour
- 1 cup vegetable oil
- 1 tsp salt
- 2 1/4 cups white sugar
- 1 tsp baking soda
- 3 tsp vanilla extract
- 1 tsp baking powder
- 2 cups grated zucchini
- 3 tsp ground cinnamon
- 3 eggs
- 1 cup chopped walnuts (optional)

Mom's Zucchini Bread
Time: 15 minutes prep, 40 minutes cook
Servings: 24 2 loaves
Directions
- Grease and flour 2 8x4 inch pans. Preheat oven to 325 degrees F (165 C)
- Grate zucchini
- sift flour, salt baking powder, baking soda, and cinnamon together in a bowl
- beat eggs, oil, vanilla and sugar together in a LARGE bowl. Add dry ingredients to the creamed mixture and beat well. Stir in zucchini (and walnuts) until well combined Pour batter into prepared pans.
- Bake 40-60 min or until toothpick comes out clean. Cool on rack for 15 min. Remove bread from pan and completely cool.
