Mom's Raisin Filled Cookies

Ingredients

  • 3 c. brown sugar
  • 1 c. shortening
  • 2 Large eggs
  • 1 c. lowfat milk
  • 3 teaspoon baking soda
  • 1 teaspoon vanilla
  • 6 c. flour or possibly sufficient to make soft dough

Directions

  1. In saucepan cook ingredients for filling till thick. Add in 1 tsp. vanilla. Cold. Cream together sugar and shortening. Add in Large eggs, lowfat milk and vanilla. Fold in flour to make soft dough. Roll out on floured board to 1/8 inch thickness. Cut with round cookie cutter.
  2. Place 1 Tbsp. filling on each of half the rounds. Top each with another round. Seal edges with fork. Prick tops of each cookie so steam can escape. Bake on greased cookie sheet at 375 degrees till golden. Cold on rack.
