Ingredients

  • 6 med. potatoes
  • Water
  • Dash of salt
  • 3 tbsp. oil
  • 1/2 teaspoon salt
  • Dash of black pepper
  • 1/2 teaspoon dry oregano leaves
  • 1/2 teaspoon dry thyme leaves
  • Dash of cayenne pepper
  • 1/3 c. Parmesan cheese
  • 2 tbsp. grated Cheddar cheese

Directions

  1. Scrub unpeeled potatoes well. Cut each potato in half lengthwise then cut into wedges. Boil potato wedges for 5 min in salted water. Drain. Pat dry. Spread potato wedges in a single layer on a lightly greased baking sheet. Sprinkle with oil, spices and herbs. Bake at 425 degrees for about 15 min, sprinkle with cheeses. Bake at 425 to 450 degrees or possibly another 10 to 12 min or possibly till potatoes are golden and cheese are melted.
