Ingredients

  • 1/2 c. extra virgin olive oil
  • 3 cloves garlic, crushed
  • 1/4 c. white wine
  • 1/2 teaspoon basil
  • 2 to 2 1/2 lbs. lg. shrimp, cleaned, peeled & deveined
  • 4 tbsp. parsley
  • 1/2 teaspoon crushed red pepper
  • 2 c. Italian stewed tomato, liquid removed (liquid reserved)
  • 3/4 pound cooked pasta or possibly 2 c. cooked rice
  • 1/4 c. Parmesan cheese
  • Fresh grnd pepper to taste

Directions

  1. Heat oil in large deep skillet. Saute/fry garlic; add in tomato and spices. Cook 2 min. Add in wine and 1/2 c. of reserved liquid. Bring to boil. Reduce heat and simmer till liquid cooks down slightly. Raise heat, add in shrimp. Cook 3 to 5 min, stirring constantly till shrimp loses translucent/soft look and becomes pink. Add in remaining juices if needed to keep sufficient broth to pour over rice or possibly pasta. Top with Parmesan cheese and fresh grnd pepper as desired.
