A delicious American Style Caserole with all of the rich flavorings of Mexico!

Ingredients

  • 1lb. Extra Lean Ground Turkey (Fresh)
  • 2 boxes Jiffy Corn Muffin Mix
  • 6 Mission Yellow Corn Tortillas
  • Light/Olive Oil Cooking Spray
  • 2 Cups Mozzarella Cheese (Shredded)
  • Las Palmas Enchilada Sauce (Medium Sized Can)
  • 2Tsp Ground Cumin
  • 1Tsp Ground Oregano
  • Mexicorn Vegetable Mix (Canned/Green Giant)
  • Small Can of sliced black olives
  • 5 green onion stems (Chopped)
  • 2 Eggs
  • 2/3 Cup %Milk

Directions

  1. Preheat oven to 400 degrees
  2. prep corn muffin mix, according to instructions on box
  3. brown and crumble ground turkey
  4. once meat is browned, add in cumin, oregano and 1/2 cup of enchilada sauce and Mexicorn Vegetable mix) and Stir
  5. spray the bottom of a 9x13 baking dish with cooking spray
  6. line the dish by making two rows of three corn tortillas, slightly overlapping
  7. pour some of the meat mixture over the top of the tortillas
  8. sprinkle cheese, olives and chopped green onions over the cheese
  9. repeat steps 8 and 9 until you are out of ingredients
  10. smooth corn muffin mixture over the top of final meat/cheese layer
  11. bake uncovered for about 15 minutes.
  12. Remove from oven, allow to cool, eat it :)
