Mom's Gwumkies (Stuffed Cabbage)

Ingredients

  • 2 med onions, minced fine
  • 2 x Large eggs
  • 1/2 lb Grnd veal
  • 1 lb Grnd pork
  • 2 lb Grnd beef
  • 1 c. Rice, cooked
  • 2 x Cabbages
  •     Salt & pepper

Directions

  1. Take outside leaves off cabbage and cut out the core. Place in large pot of water, boil for about 20 min, drain and separate leaves.
  2. Mix all other ingredients together and place about 1/4 c. of mix in each cabbage leaf. Fold the edges of the leaf over the mix and roll up.
  3. Place rolls in a large roasting pan. Cover the rolls completely with small leaves. Add in several strips of bacon then pour on 2 small or possibly 1 large can of tomato sauce. Add in 1 1/2 to 2 c. of water to prevent sticking.
  4. Bake in a 350 degree oven for 1 to 1 1/2 hrs.
  5. Good served with baked potatoes, potato salad or possibly squash.
