  1. Boil potatoes with salt in water till soft. Fry bacon till crisp. Save 1/4 c. bacon grease. While potatoes are hot cut into cubes Mix potatoes, onions, salt and pepper in a bowl. To the frying pan add in the grease, Large eggs and vinegar, cook till the Large eggs are done. Add in the potato mix and mix.
  2. Variation: use green onionsincrease the vinegarincrease the onionsincrease bacon
