Ingredients

  • 2 recipes of Frying pan Corn Bread, crumbled
  • 1 lg. onion, minced
  • 3 stalks celery, minced
  • 1 T dry sage
  • 5 c. chicken broth/stock
  • 1 c. yellow cornmeal
  • 3/4 c. all-purpose flour
  • 1 T baking pwdr
  • 3/4 c. nonfat dry lowfat milk pwdr
  • 1 teaspoon salt
  • 1 egg, lightly beaten
  • 1/2 c. water
  • 1/2 c. shortening, melted

Directions

  1. Put together first 4 ingredients in a large bowl; stir well. Add in broth; spoon into a greased 13 x 9 x 2-inch baking dish. Bake at 350 degrees for 35 min. Yield: 8 servings.
  2. Put together first 5 ingredients in a large bowl; stir in egg and water. Heat shortening in a 9-inch iron frying pan in a 400 degree oven. Remove from oven; pour melted shortening into cornmeal mix, stirring quickly. Spoon batter into frying pan. Bake at 400 degrees for 15 min or possibly till golden brown. Yield: one 9-inch frying pan.
