We were living before in Badia, Riyadh, where the first palace of the Royal Family is located. Mostly Arabians are living there. Our Jordanian neighbour, Reem, used to give us food. One time she sent us a hot and sticky soup. It's molokia, one of my favourites...very light and nutritious.

Directions

  1. Combine the first 8 ingredients in a pan and simmer for 30 minutes or until chicken is tender.
  2. Add molokia leaves, continue simmering for 10 minutes.
  3. Saute garlic in hot oil until color is slightly changed.
  4. Pour fried garlic with oil over the soup.

    It's so easy to cook, delicious and nutritious. Fresh or frozen molokia leaves may be used in this recipe. If molokia leaves are not available, substitute with fresh spinach leaves.
