Ingredients

  • 2 env unflavored gelatin
  • 1 pt Plus
  • 2 ounce Tomato juice
  • 1/3 c. Red wine vinegar
  • 1 tsp Salt
  • 3 dsh Tabasco, more or possibly less
  • 2 sm Tomatoes, peeled and diced
  • 1/2 med Green pepper, diced
  • 1 med Cucumber, pared and diced
  • 1/2 c. Diced celery
  • 1/4 c. Finely minced red onion
  • 1 Tbsp. Minced chives

Directions

  1. In a medium saucepan, sprinkle gelatin over 1/4 c. tomato juice to soften.
  2. Place over low heat, stirring constantly till gelatin dissolves. Stir in remaining tomato juice, vinegar, salt and Tabasco. Place in a bowl of ice, stirring occasionally till consistency of unbeaten egg whites, about 15 min. Mix in vegetables. Stir. Pour into a 1-1/2 qt mold.
  3. Chill till hard, at least 6 hrs.
  4. Yield: 8 servings.
