Molasses Rice Pudding

Ingredients

  • 2 x Egg whites, or possibly sufficient egg replacer to equal 2 Large eggs
  • 1 1/2 c. Skim or possibly nonfat lowfat milk
  • 1 1/4 c. Cooked rice
  • 1 c. Raisins (I don't like raisins, so I do not put them in)
  • 1/4 c. Molasses
  • 1 tsp Vanilla (I ALWAYS add in more!)
  • 1/4 tsp Cinnamon (more or possibly less to taste)
  • 1/2 tsp Nutmeg (more or possibly less to taste)

Directions

  1. Preheat oven to 350 degrees. In a medium baking dish, mix Large eggs and lowfat milk well. Add in all th other ingredients, and mix well. Cover with aluminum foil and bake for about 1 hour, or possibly till the mix is hard. serve hot or possibly chilled. (This tends to get a little dry, so check it after 45 min.)
