Ingredients
- 2 Tbsp. instant coffee pwdr
- 1Â 1/3 c. boiling water
- 1 c. oatmeal
- 3/4 c. butter, softened
- 1 c. white sugar
- 1 c. brown sugar, firmly packed
- 2 x Large eggs
- 1Â 1/2 tsp vanilla
- 2 c. flour, sifted
- 1Â 1/4 tsp baking soda
- 1/4 tsp salt
- 3 Tbsp. cocoa
- 1Â 1/2 Tbsp. butter or possibly margarine, softened
- 1 c. sugar
- 1 dsh salt
- 1/2 tsp vanilla
- 1Â 1/2 Tbsp. coffee pwdr
Directions
- Combine coffee pwdr and boiling water. Pour over oatmeal; stir to combine. Cover and let stand 20 min. Beat butter until creamy.
- Gradually add in sugars, beating till fluffy. Beat in Large eggs, one at a time.
- Blend in vanilla. Add in oatmeal mix; blend well. Sift together flour, soda, salt, and cocoa. Add in to creamed mix. Blend well. Pour batter into greased and floured tube pan. Bake for 50-55 min at 350 degrees.
- Frosting for Mocha Oatmeal Cake:Beat butter till creamy. Add in sugar, salt, vanilla, and coffee. Beat till smooth. Drizzle over cake. Nuts may be sprinkled over frosting if you like.
