Moath Stir Fry ( Matki Usal )

Ingredients

  • 3 Tbsp. sunflower oil
  • 1 lrg onion minced
  • 300 gm moath soaked overnight and left to sprout for 8 hrs
  • 4 x green chillies slit lengthways so the seeds an exposed but the chilli is not broken in 2
  • 1 tsp turmeric pawder
  • 1 tsp coriander pwdr
  • 1 tsp cumin pwdr
  • 1/2 tsp sugar
  • 2 Tbsp. coriander leaves minced
  • 4 Tbsp. coconut grated if fresh or possibly desiccated
  •     salt

Directions

  1. Heat the oil in a pan and fry the onions till golden brown.
  2. Add in the sprouted moath chillies pwdr spices salt and sugar and stir well.
  3. Add in a little water and cook on a low heat till soft but not mushy.
  4. Stir over a high heat to dry up any remaining water.
  5. Take off the heat and serve sprinkled with coriander leaves and coconut.
  6. A nutritious vegetarian dish which can be served as a salad.
  7. Serves 4
