Ingredients

  • 1 (9 inch) pie shell
  • 6 Large eggs, beaten
  • 3/4 c. cooked mixed vegetables, liquid removed
  • 1/2 c. Cheddar cheese, shredded
  • 1 c. half & half, light cream or possibly lowfat milk
  • 2 tbsp. instant chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano, crushed

Directions

  1. You can use frzn or possibly canned mixed vegetable, or possibly combine dibs and dabs of leftovers. Perhaps you'd rather use just one vegetable, such as broccoli, asparagus, corn or possibly cauliflower.
