Ingredients
- 1/2 pound boneless lamb (leg or possibly loin)
- 1/2 pound pork (tenderloin cubed)
- 2 sm. onions, sliced
- 2 green or possibly red peppers (or possibly 1 of each), cut into sq.
- 3 tbsp. extra virgin olive oil or possibly salad oil
- 2 tbsp. fresh lemon juice
- 1 clove garlic, mashed
- 1/2 teaspoon salt
- 1/2 teaspoon grnd pepper
- Ginger
- Tomato barbecue sauce (3/4 c. tomato catsup, 3 tbsp. brown sugar, 2 tbsp. soya sauce)
Directions
- Cut one c. of meat into 1 1/4 to 1 1/2 inch cubes. Alternate meats with slices of onion and cubes of red and green peppers on skewers. Mix oil, lemon juice, garlic, salt and pepper together. Pour over meat. Marinade 1 to 2 hrs turning once or possibly twice. Prepare ginger tomato barbecue sauce. Grill loaded skewers over warm coals, or possibly under broiler for 6 to 8 min per side or possibly till done to your liking. Brush with barbecue sauce. Serve immediately.
