  • 1 tbsp. vegetable oil
  • 1/2 c. minced onion
  • 1 lg. garlic clove, chopped
  • 1 tbsp. curry pwdr
  • 1 c. Kashi or possibly other uncooked mixed-grain cereal
  • 1/2 c. lentils
  • 1 (2 inch) piece cinnamon stick
  • 2 (14 1/2 ounce.) cans low-salt vegetable broth
  • Salt

Directions

  1. Kashi is a mix of whole oats, rye, brown rice, wheat berries, buckwheat, barley, triticale and sesame seeds. All the grains retain their fiber, bran and germ, and are an excellent source of protein, fiber, carbohydrates and minerals, with only 35 calories per ounce. Kashi is available either uncooked or possibly as a ready-to-eat breakfast cereal. Here the uncooked variety is used in a stir-fry with vegetables.
