Mississippi Mud Bars

Don't even try to count the calories - just enjoy every mouthful of these super rich brownies, loaded with coconut and chopped pecans

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1/4 cup baking cocoa
  • 4 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 - 3 1/2 oz can flaked coconut
  • 1 1/2 cups chopped pecans
  • 1 - 7 1/2 oz. jar marshmallow creme
  • Your choice of chocolate frosting

Directions

  1. Cream together the butter, sugar, and baking cocoa in a bowl until light and fluffy, using an electric mixer at medium speed
  2. Add the eggs and the vanilla
  3. Beat for 2 minutes more at medium speed
  4. Blend in the flour
  5. Stir in the coconut and the pecans
  6. Spread the mixture into a greased jelly roll pan, 15 1/2 x 10 1/2 in
  7. Bake at 350 F for 30 minutes or until done
  8. Remove from the oven
  9. Spoon the marshmallow creme over all
  10. Allow to stand for 5 minutes
  11. Spread carefully using a metal spatula
  12. Spread your choice of chocolate frosting over the brownies while the brownies are still warm
  13. Cool completely
  14. Cut into 4 x 1 inch bars
