Mississippi Mud Bars Recipe
Don't even try to count the calories - just enjoy every mouthful of these super rich brownies, loaded with coconut and chopped pecans

- Cream together the butter, sugar, and baking cocoa in a bowl until light and fluffy, using an electric mixer at medium speed
- Add the eggs and the vanilla
- Beat for 2 minutes more at medium speed
- Blend in the flour
- Stir in the coconut and the pecans
- Spread the mixture into a greased jelly roll pan, 15 1/2 x 10 1/2 in
- Bake at 350 F for 30 minutes or until done
- Remove from the oven
- Spoon the marshmallow creme over all
- Allow to stand for 5 minutes
- Spread carefully using a metal spatula
- Spread your choice of chocolate frosting over the brownies while the brownies are still warm
- Cool completely
- Cut into 4 x 1 inch bars
