Directions

  1. Put the besan flour into a bowl, add in the cayenne pepper, coriander, cumin, and mint and season with salt and pepper to taste. Stir in the yogurt, water, and sliced onion and mix well together.
  2. One-third fill a large, deep skillet with oil and heat till very warm.
  3. Drop heaped spoonfuls of the mix, a few at a time, into the warm oil and use two forks to shape the mix into rough ball shapes.
  4. Fry the bhajis till golden and cooked through, turning frequently.
  5. Drain the bhajis on absorbent paper towels and keep hot while cooking the remainder in the same way.
  6. Arrange the bhajis on a platter and garnish with sprigs of fresh mint.
  7. Serve warm or possibly hot.
