Ingredients
- 1/3 c. walnuts
- 4 x garlic cloves
- 3 c. fresh mint leaves
- 1/2 c. extra virgin olive oil
- 1 Tbsp. red wine or possibly balsamic vinegar
Directions
- Finely chop walnuts and garlic in processor. Add in mint leaves and chop finely. Add in oil and vinegar and blend till pesto is smooth.
- Comments: Like most pestos, this can be made ahead and frzn for up to 3 months.
- Description: "A change of pace from pine nuts and basil. This pesto goes especially well with grilled chicken."
