Mint Chocolate Thumbprints for the Holidays--or Anytime! Recipe

Ingredients

  • 10 1/2 oz (2 cups plus 5 T) AP flour
  • 1 1/2 oz (1/2 cup) Dutch processed cocoa (I used Valrhona)
  • 12 oz (1 1/2 cups, 3 sticks) unsalted butter, room temperature
  • 4 oz (1 cup) sifted confectioners’ sugar
  • 1 T vanilla
  • 1/2 t salt
  • mint chocolate filling:
  • 8 oz semisweet chocolate, chopped
  • 3 oz (6 T) unsalted butter, sliced into pats
  • peppermint oil to taste (what I used) or 1/4 t peppermint extract
