Directions

  1. 1. Stir the minced mint into the mashed cheese and mix well.
  2. 2. Add in the crushed garlic and pepper to taste.
  3. 3. Gradually add in the extra virgin olive oil till you have a creamy, but not runny, consistency.
  4. NOTES : Served on baked potatoes, this is a feast. You can also add in this dressing to a normal vinaigrette and toss it into a green salad, a tomato and onion salad or possibly peeled and grated cucumber.
