%20and%20you%20could%20have%20them%20prepared%20in%20less%20than%20a%20half%20hour%20in%20most%20cases.%20I%20love%20the%20versatility%20that%20these%20provide%20because%20you%20can%20make%20them%20how%20you%20want%20them.%3C/p%3E%3Cp%3EI%20had%20thought%20about%20putting%20candied%20pecans%20on%20top%20but%20since%20I%20didn't%20have%20any%20and%20didn't%20have%20time%20to%20make%20any%20I%20used%20chocolate%20chips%20instead%20:).%20One%20of%20my%20favorite%20characteristics%20of%20cheesecake%20is%20the%20creamy%20texture.%20Making%20sure%20that%20the%20cream%20cheese%20is%20at%20room%20temperature%20or%20close%20to%20it%20is%20so%20important%20to%20achieving%20the%20correct%20texture.%20I've%20been%20known%20to%20unwrap%20the%208%20ounces%20of%20cream%20cheese%20and%20put%20it%20on%20a%20plate%20and%20pop%20it%20into%20the%20microwave%20for%2020-25%20seconds%20to%20soften%20it%20up%20to%20speed%20up%20the%20process.%3C/p%3E%3Cp%3EI%20put%20Oreos%20on%20the%20bottom%20of%20these%20cute%20little%20cups%20of%20chocolate%20goodness%20and%20the%20great%20thing%20about%20using%20Oreos%20is%20that%20you%20can%20use%20any%20flavor%20you%20want!%20I%20wouldn't%20think%20that%20the%20color%20would%20make%20a%20difference%20(like%20the%20pastel%20Spring%20ones%20I%20remember%20seeing%20one%20time)%20because%20the%20filling%20pretty%20much%20melts%20into%20the%20cookies.%20But,%20using%20a%20peanut%20butter%20or%20mint%20flavored%20Oreo%20may%20be%20an%20awesome%20addition.%20I%20also%20don't%20think%20double%20stuffed%20would%20be%20good%20either,%20just%20because%20it%20would%20take%20up%20more%20space%20which%20means%20less%20cheesecake%20filling,%20unless%20that's%20what%20you%20want%20of%20course.%20Another%20fun%20idea%20would%20be%20to%20use%20white%20chocolate%20instead%20of%20semi-sweet,%20then%20use%20the%20vanilla%20Oreos.%20That%20would%20be%20a%20nice%20twist%20that%20could%20be%20topped%20with%20some%20fresh%20fruit%20for%20summer.%20Happy%20Baking!%3C/p%3E%3Cp%3EMini%20Chocolate%20Cheesecakes%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F.%20Place%20a%20cupcake%20liner%20in%207%20cavities%20of%20a%20muffin%3C/p%3E%3Cp%3Epan.%20Place%20one%20Oreo%20in%20each%20cupcake%20liner,%20set%20pan%20aside.%3C/p%3E%3Cp%3E2.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20mixer,%20whip%20the%20cream%20cheese%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20the%20brown%20sugar%20and%20egg,%20then%20mix%20on%20medium%20speed%20until%20smooth%20and%3C/p%3E%3Cp%3Ecreamy.%20Mix%20in%20the%20chocolate%20and%20coffee%20until%20smooth.%20Evenly%20divide%20the%3C/p%3E%3Cp%3Ebatter%20between%20the%207%20cupcake%20liners.%20Sprinkle%20with%20chocolate%20chips.%3C/p%3E%3Cp%3E3.%3C/p%3E%3Cp%3EBake%20for%2015-18%20minutes%20or%20until%20the%20cheesecakes%20are%20set%20in%20the%20middle.%3C/p%3E%3Cp%3EIf%20they%20crack%20a%20little%20it%20is%20okay,%20they%20should%20settle%20and%20the%20cracks%3C/p%3E%3Cp%3Ewill%20come%20together%20again.%3C/p%3E%3Cp%3E4.%3C/p%3E%3Cp%3ELet%20the%20cheesecakes%20cool%20in%20the%20pan%20on%20a%20wire%20rack%20for%2010%20minutes,%20then%3C/p%3E%3Cp%3Eplace%20the%20cheesecakes%20in%20the%20refrigerator%20for%20at%20least%20two%20hours%20to%20let%3C/p%3E%3Cp%3Ethem%20set%20up%20completely.%3C/p%3E%3Cp%3EThis%20recipe%20may%20be%20linked%20up%20to:%3C/p%3E%3Cp%3EDon't%20forget%20to%20follow%20me%20on%20Blog%20Lovin'%20or%20using%20one%20of%3C/p%3E%3Cp%3Ethe%20buttons%20at%20the%20top%20of%20the%20page%20so%20you%20don't%20miss%20a%20recipe!%3C/p%3E){kind=link}
