Ingredients

  • 1/4 c. Butter, (1/2 stick)
  • 6 Tbsp. Minced onion
  • 3/4 c. Diced celery
  • 2 1/2 c. Warm water
  • 2 c. Cubed peeled boiling potatoes, (1/2-inch)
  • 3 c. Frzn corn kernels, thawed
  • 2 Tbsp. Sugar
  • 2 tsp Salt
  • 1 dsh White pepper
  • 3 Tbsp. Flour
  • 1 quart Half and half cream

Directions

  1. Heat butter in saucepan over medium heat. Add in onion and celery and saute/fry 5 min till soft but not brown.
  2. Add in water, potatoes, corn, sugar, salt and pepper. Cover and simmer till potatoes are barely tender, about 30 min.
  3. Whisk flour into 1 c. half and half. Stir into soup. Add in remaining 3 c. half and half and simmer till soup has thickened to creamy consistency, about 15 min. Season to taste with additional salt and pepper if needed. If too thick, add in lowfat milk; if too thin, simmer 5 - 10 more min.
