Milanese Style Minestrone Recipe

Ingredients

  • 1/4 lb salt pork
  • 1 x garlic clove chopped
  • 1 x onion thinly sliced
  • 2 sprg parsley minced
  • 1/2 c. small white beans soaked overnight, and liquid removed
  • 2 x potatoes cubed
  • 2 x carrots diced
  • 2 x celery stalks sliced
  • 2 med zucchini thinly sliced
  • 2 x tomatoes minced
  • 1 sm cabbage head shredded
  • 1 c. frzn peas thawed
  • 1/2 c. rice Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. minced basil grated Parmesan cheese for garnish

Directions

  1. Saute/fry the salt pork, garlic, onion and parsley in a skillet. Combine with all other ingredients, except cabbage, peas, rice and basil, and 2 qts water in crock pot. Cover and cook on HIGH 2 hrs, then on LOW 8 hrs.
  2. Add in cabbage, peas, rice and cook on HIGH 30 min or possibly till rice is tender. Add in salt, pepper, and basil, top with grated Parmesan and serve in bowls, with French bread.
