Ingredients

  • For the chicken:
  • 1 cup Greek yogurt
  • 2 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 large clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts, cut into 1 inch pieces
  • 2 medium red bell peppers, cut into 1 inch pieces
  • 2 medium yellow bell peppers, cut into 1 inch pieces
  • 2 medium green bell peppers, cut into 1 inch pieces
  • 1 large red onion, quartered and separated
  • For the tabbouleh:
  • 1 1/2 cups Israeli couscous
  • 2 1/2 cups water
  • 1 1/2 teaspoon salt, separated
  • 1 cup chopped cucumber
  • 1 1/2 cups grape tomatoes, quartered
  • 1/3 cup chopped Vidalia onion
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoon minced fresh mint
