Microwave Recipe: Tuna Shells

Ingredients

  • 1 (15 1/2 ounce.) jar spaghetti sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon instant chopped onion
  • 1 egg
  • 1/2 c. sm. curd cottage cheese
  • 1 (9 1/4 ounce.) can tuna, liquid removed & flaked
  • 1 c. shredded Mozzarella cheese (about 4 ounce.)
  • 2 tbsp. grated Parmesan cheese
  • 1 (2 ounce.) jar diced pimiento, liquid removed
  • 1 tbsp. dry parsley flakes
  • 20-25 uncooked jumbo macaroni shells, cooked, liquid removed & cooled

Directions

  1. Mix spaghetti sauce, Italian seasoning and instant onion; pour 1/2 c. into oblong baking dish, 12" x 7 1/2' x 2". Beat egg; stir in cottage cheese, tuna, Mozzarella cheese, Parmesan cheese, pimiento and parsley. Fill macaroni shells with cheese mix. Arrange filled shells on sauce in dish. Spoon remaining sauce over shells, covering shells completely.
  2. Cover tightly and microwave on medium-high (70%) 5 min; turn dish one half turn. Microwave till warm, 5 to 8 min. Garnish with minced parsley if you like. 5 servings.
