  • 4 ounce. pasta shells
  • 3 green onions, sliced
  • 1 (10 3/4 ounce.) can condensed cream of celery soup, undiluted
  • 1/8 teaspoon pepper
  • 1 pound boneless, skinless turkey breast, cut into 1" chunks
  • 1 (7 ounce.) jar roasted sweet red peppers, liquid removed
  • 1/2 (10 ounce.) pkg. frzn peas (about 1 c.), thawed
  • 1/4 c. lowfat milk

Directions

  1. Prepare pasta shells according to package directions; drain and keep hot. Meanwhile, in a 2 qt casserole, cook green onions, soup and pepper, covered on high 4-6 min till vegetables soften slightly; stir halfway through cooking. Add in turkey pcs; cook, covered, on high 5-6 min till turkey is no longer pink, stirring halfway through cooking. Cut roasted red peppers into bite-size pcs; add in pepper pcs, peas, lowfat milk and pasta to turkey mix; toss gently to combine. Cook on high 1-2 min till warm. If desired, sprinkle top with Parmesan cheese. Makes 6 servings.
  2. To use cooked turkey, cook onions, soup and pepper on high 7-9 min. Add in 2 c. cooked turkey cut into 1 inch pcs, roasted red peppers, peas, 1/2 c. lowfat milk and pasta. Cook on high 3-5 min. Chicken can be substituted for turkey.
