%20growing%20up.%20%20So,%20when%20I%20was%20looking%20for%20an%20idea%20for%20a%20main%20dish%20side%20for%20dinner%20the%20other%20night,%20I%20decided%20to%20make%20some%20of%20these.%20%20I%20found%20several%20recipes%20online...but%20they%20all%20took%20a%20long%20time%20to%20bake%20in%20the%20oven.%20%20And%20I%20suppose%20that's%20so%20they%20crispy%20on%20the%20outside%20and%20soft%20on%20the%20inside...well,%20I%20didn't%20want%20to%20wait%20that%20long.%20%20(When%20do%20I%20ever?)%20%20I%20whipped%20up%20a%20batch%20and%20threw%20them%20in%20the%20micro%20and%20viola%20~10%20minutes%20later%20they%20were%20perfectly%20cooked%20and%20devoured.%20%20Yum.%20%20Love%20em.%20%20Here's%20what%20I%20whipped%20up...%3C/p%3E%3Cp%3E1.%20%20Cut%20the%20potatoes%20in%20thin%20slices%20almost%20all%20the%20way%20through%20except%20for%20the%20last%201/4-3/8%22%20of%20the%20bottom,%20so%20they%20stay%20together.%20%20Tip:%20%20Set%20a%20wooden%20spoon%20(or%20table%20knife)%20on%20each%20side%20of%20the%20potato%20you%20are%20about%20to%20cut.%20%20That%20way%20you%20won't%20cut%20all%20the%20way%20through%20the%20potato%20and%20you%20won't%20have%20to%20think%20about%20it.%20:)%3C/p%3E%3Cp%3E2.%20%20Place%20cut%20potatoes%20on%20a%20microwave%20safe%20plate.%3C/p%3E%3Cp%3E3.%20%20Toss%20together%20the%20olive%20oil,%20garlic%20and%20cheese%20until%20combined.%20%20Then%20evenly%20distribute%20it%20over%20(and%20into%20the%20slits)%20of%20the%20potatoes.%3C/p%3E%3Cp%3E4.%20%20Place%20in%20the%20microwave%20and%20cook%20on%20your%20potato%20setting%20for%204%20potatoes%20or%20for%20about%205%20minutes%20a%20potato!%20%20:)%20%20(If%20your%20micro%20doesn't%20have%20a%20plate%20that%20rotates%20inside%20be%20sure%20to%20turn%20it%20every%20few%20minutes%20so%20they%20don't%20cook%20unevenly!)%3C/p%3E%3Cp%3E5.%20%20Serve%20hot%20and%20along%20with%20some%20protein,%20or%20as%20a%20mid-day%20snack.%20%20These%20are%20that%20good.%20%20Simple,%20delish%20and%20they'll%20make%20you%20want%20to%20watch%20some%20football.%20%20:)%20%20(And%20no,%20I%20have%20no%20idea%20why%20they%20call%20these%20Hasselbeck%20Potatoes,%20but%20it%20does%20make%20me%20think%20of%20Elizabeth%20Hasselbeck's%20football%20playing%20buddy,%20whenever%20I%20see%20them!)%3C/p%3E){kind=link}
