Michiko's Rice And Chicken Recipe

Ingredients

  • 2 x Chicken breasts, deboned and boiled, minced small
  • 1 pkt Shitaki mushrooms, soaked in hot water for about 30 min, de-stemmed and sliced
  • 3 Tbsp. Mirin sweet seasoning
  • 3 Tbsp. Sugar Soy sauce
  • 4 c. Short grained rice, washed
  • 1/4 c. Diced or possibly sliced (very small) carrots or possibly green beans (up to 1/2)

Directions

  1. Mix sugar and Mirin, set aside. In rice cooker, have rice with water to proper line for 4 c.. Pour Mirin/ sugar mix on top of rice. Pour soy sauce, sufficient to make it light brown. Gently place chicken, sliced shitake mushrooms, carrots or possibly green beans on top rice. Cook in rice steamer till done. Let stand in covered rice steamer an additional 30-45 min before opening, and mixing together. Eat. This is absolutely delicious. allot of times I leave out the meat and add in another 1/2 again amount of Shitakes.
