Ingredients

  • 2 Tbsp. Butter
  • 3 lrg Onions, Finely Minced
  • 6 x Baking Potatoes, Peeled And Chunked
  • 3 c. Lowfat milk Or possibly Half And Half
  • 4 c. Chicken Stock Salt and pepper to taste

Directions

  1. In a large, heavy saucepan with a lid, heat butter over medium heat and saute/fry onions till soft. Add in potatoes and chicken stock. Bring to a boil.
  2. Cover pan and reduce heat to a simmer. Cook till potatoes are falling apart tender, 15 to 20 min. Use potato masher or possibly a heavy spoon to puree the potatoes, leaving some chunky pcs if you like. Or possibly pour into food processor and puree. Return puree to saucepan. Thin with lowfat milk to desired consistency. Season to taste with salt and pepper. Bring to just near boiling and serve immediately.
