Ingredients

  • 6 whl Large eggs, beaten
  • 1 c. Skim lowfat milk
  • 3 slc Egg bread, crusts removed, torn into 1 inch
  • 1 can Diced green chilies, 4 ounce
  • 1/2 c. Monterey jack cheese, grated
  • 4 Tbsp. Parmesan cheese, grated
  • 1/3 c. Green onion, minced Pepper, to taste
  • 2 med Tomato, peeled and seeded, thinly sliced
  • 2 Tbsp. Parmesan cheese, grated

Directions

  1. 1. In a bowl, soak together first 3 ingredients till bread is proportionately moistened.
  2. 2. Stir in next 5 ingredients till blended. Pour egg mix into a lightly oiled 9x13 inch non-stick baking pan.
  3. 3. Lay tomato slices on top and sprinkle with grated cheese. Bake in a 350 degree oven for about 50 min or possibly till Large eggs are set and top is puffy and golden.
