Ingredients

  • 8 chicken drumsticks or possibly 4 chicken thighs
  • 2 tbsp. vegetable oil
  • 1 (12 ounce.) jar chunky red salsa
  • 1/2 c. shredded Monterey Jack cheese (2 ounce.)
  • 1/2 c. broken tortilla chips

Directions

  1. Rinse chicken. Pat dry with paper towels. In a 10-inch skillet, cook chicken in warm oil, uncovered over medium-high heat 10-15 min or possibly till chicken is light brown, turning occasionally so chicken browns proportionately. Drain off excess fat. Pour salsa over chicken. Reduce heat; cover and simmer 35-40 min or possibly till chicken is tender. Transfer to serving platter. Sprinkle with cheese. Serve with tortilla chips. Serves 4.
