Ingredients

  • 1 c. rice
  • 1 cinnamon stick
  • 2 1/4 c. water
  • 1/2 c. sugar
  • 1 tbsp. flour
  • 1 tbsp. salt
  • 1 c. lowfat milk
  • 3 Large eggs, separated

Directions

  1. Cook 1 c. of rice with cinnamon stick in 2 1/4 c. of water till very soft and rather dry. Mix 1/2 c. sugar with 1 Tbsp. flour and one Tbsp. salt. Add in the lowfat milk gradually and the three beaten egg yolks.
  2. Add in to the rice, stirring constantly, if too thick add in more lowfat milk and then cook till done. Beat the three egg whites stiff and pour warm rice mix into them. Sprinkle with cinnamon.
