Mexican Rice Patties With Red Bean Sauce And Cheese

Ingredients

  • 2 c. brown rice, cooked
  • 2 x egg, beaten
  • 5 x green onion, sliced, thinly
  • 1/2 c. walnuts, minced, finely
  • 1/4 c. breadcrumbs
  • 1/2 tsp thyme, dry
  • 1/2 tsp basil, dry salt, to taste pepper, to taste
  • 1/4 c. finely diced red bell pepper Red Bean Sauce
  • 1 x 15 ounce can red kidney beans, rinsed, and, liquid removed
  • 8 ounce tomato sauce
  • 1/4 c. water
  • 3 Tbsp. chili pwdr
  • 1/2 c. shredded old cheddar cheese
  • 1/2 tsp oil green bell pepper

Directions

  1. Mix rice and remaining ingredients in a medium bowl. With wet hands shape into 8 patties and place on foil sprayed with cooking spray.
  2. Place on grill and heat on medium high heat for 10-12 min or possibly till edges of patties begins to brown.
  3. While patties are grilling, make red bean sauce.
  4. Top rice patties with sauce and cheddar cheese.
  5. Red Bean Sauce:Saute/fry green bell pepper in 1/2 teaspoon oil till tender.
  6. Stir in kidney beans, tomato sauce, water, chili pwdr and salt and pepper.
