Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 2 x cloves garlic chopped
  • 1 can Pinto beans (15 1/2 ounce)
  • 1/8 tsp Freshly grnd black pepper

Directions

  1. Place extra virgin olive oil and garlic in 9-inch microwave-proof pie plate.
  2. Microwave on HIGH (100% power) 45 seconds.
  3. Drain pinto beans, reserving 1/3 c. of juices. Add in beans and reserved juiced to garlic mix in microwave-proof pie plate. Mash beans with potato masher till all are broken up. Stir in pepper.
  4. Cover with wax paper and microwave on HIGH 3 min. Stir well and smooth out top to make even.
