Mexican Pot Beans/Refried Beans Recipe

Ingredients

  • 1 lb dry pinto beans soaked overnight, and liquid removed
  • 2 Tbsp. lard or possibly bacon drippings
  • 1 sm onion minced
  • 1 Tbsp. minced fresh oregano (or possibly 1 tspn dry oregano) Salt to taste

Directions

  1. Combine all ingredients, except salt, with 3 c. water in crock pot. Cook on HIGH, covered, 2 hrs. Turn heat to LOW and cook, covered, 8 to 10 hrs.
  2. Season with salt and serve with tortillas, minced onions and chiles, grated cheese, shredded lettuce, radishes.
