Mexican Hamburger Stuffed Peppers Recipe

Ingredients

  • Comments: You can make this ahead of time & cook later. Also this freezes really well. Taste like you just cooked them.
  • 4 lrg green peppers
  • 1 lb hamburger
  • 1/3 c. minced onion
  • 1/3 c. minced celery
  • 3 c. cooked rice
  • 1 c. salsa
  • 2 tsp minced green chilies
  • 2 c. shredded Monterey jack & cheddar cheese mix
  • 1/4 c. salsa

Directions

  1. Cut tops off peppers & remove seeds. Put in boiling water & boil 6 minutes. Remove & set aside. Combine hamburger, onion, & celery & cook till done. Drain off grease. Stir in rice, 1-c. salsa & chilies. Fill peppers with hamburger mix. Arrange in pan. Top with cheese & salsa. Put a little water in pan. Cover tightly. Bake at 350 deg. for 45 - 55 minutes. RF4RP
