Mexican Cornbread Casserole

Ingredients

  • 1 pound ground beef
  • 1/4 c. minced onion
  • 2 tbsp. minced green chilies
  • 2 Large eggs, beaten
  • 1 can (1 lb.) creamed corn
  • 2/3 c. lowfat milk
  • 1 env. cornbread mix
  • 4 slices American cheese

Directions

  1. Preheat oven to 425 degrees.
  2. Brown beef until crumbly. Drain excess fat.
  3. Add in onions and pepper.
  4. Combine Large eggs, 1/2 of corn and lowfat milk and add in to cornbread mix.
  5. Stir until moistened.
  6. Pour half of cornbread batter into greased 9 inch square pan.
  7. Top with beef, cheese slices and remaining corn.
  8. Pour other half of cornbread mix on top.
  9. Bake for 25 to 30 min.
