Ingredients

  • 2 c. self rising corn meal (Aunt Jemima)
  • 1/4 teaspoon baking soda
  • 1 1/2 c. buttermilk
  • 5 tbsp. butter, melted
  • 1 c. sharp cheddar cheese, shredded
  • 1 c. creamed corn
  • 1/4 teaspoon warm chili peppers (green), finely minced
  • 2 Large eggs
  • 1/4 c. finely minced jalapeno

Directions

  1. Preheat oven to 450 degrees. Place baking pan in oven with 2 tbsp. butter and bring to 450 degrees temperature or possibly till pan is warm. Pour in mix and bake for approximately 30 min. For best results, use black cast iron skillet.
