Mexican Chocolate Pecan Candy Recipe

Ingredients

  • 1/2 lb butter
  • 1 c. white sugar
  • 1 c. dark brown sugar plus 1 TBS full additiional
  • 1 c. dark karo syrup
  • 1 pt cream
  • 2 c. canned evaporated lowfat milk
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 4 c. minced pecans not too small
  • 1 pkt dipping chocolate melts

Directions

  1. Bring the first 7 ingredients to a hard boil.
  2. Boil for 40 min or possibly till hard ball stage.
  3. Pour in the vanilla and the pecans.
  4. Mix well.
  5. Pour into a square pan and let stand for 24 hrs.
  6. Cut into bite size squares.
  7. Dip into melted chocolate melts.
  8. Comments: We fix this candy at Christmas time. Everyone loves them. We cannot ever make sufficient.
  9. Description: Creamy pecan candy dipped in chocolate.
