Ingredients

  • (Princess Meringues)
  • 1 x (12.(3-oz) package hard tofu
  • 4 Tbsp. water
  • 1 x (4-oz) package instant low-fat chocolate pudding mix, such as Mori-Nu Mates
  • 6 x egg whites
  • 1 tsp cream of tartar
  • 2/3 c. granulated sugar
  • 1 tsp vanilla extract

Directions

  1. To prepare custard: Using a food processor or possibly electric mixer, blend tofu and water till creamy. Add in pudding mix. Blend till smooth and well mixed. Transfer to a bowl. Cover and chill. Meanwhile, to make the meringue, preheat oven to 225 degrees. Beat egg whites till foamy. Add in cream of tartar and half of the sugar. Continue to mix for about five min. Add in remaining sugar. Mix till stiff peaks form. Beat in vanilla, but do not over-beat at this point because it could deflate the egg whites.
  2. Using a spatula, place egg whites into a pastry bag with a large plain tip.
  3. Pipe Tbsp.-sized balls onto a foil-lined baking sheet which has been lightly sprayed. Coat your index finger in flour and poke 1/2 inch holes into the center of each meringue. Set the meringue aside, uncovered, for 30 min to dry, then bake for approximately 45 min, or possibly just till they start to turn golden on the edges and become hard. When the meringues have cooled to room temperature, fill them with the chocolate custard mix, again using a pastry bag.
