Here I am with another late edition of Menu Plan Monday. Sunday, we had friends over to watch the Superbowl. I spent most of Saturday and Sunday preparing food and tidying up the house. By the time our guests left (shortly after half-time and dessert), I just didn't have the energy to post this week's menu plan (or even try to put together a menu). Monday was errand day, so that's why I'm posting late (again) this week.
As usual, I made too much food. But with 2 big men with hearty appetites and 3 teenage boys watching the game (plus us girls) I didn't want to take any chances on running out of food!

,%20I%20just%20didn't%20have%20the%20energy%20to%20post%20this%20week's%20menu%20plan%20(or%20even%20try%20to%20put%20together%20a%20menu).%20%20Monday%20was%20errand%20day,%20so%20that's%20why%20I'm%20posting%20late%20(again)%20this%20week.%3C/p%3E%3Cp%3EAs%20usual,%20I%20made%20too%20much%20food.%20%20But%20with%202%20big%20men%20with%20hearty%20appetites%20and%203%20teenage%20boys%20watching%20the%20game%20(plus%20us%20girls)%20I%20didn't%20want%20to%20take%20any%20chances%20on%20running%20out%20of%20food!%3C/p%3E%3Cp%3EBlack%20Bean%20and%20Sweet%20Potato%20ChiliIn%20the%20middle%20of%20the%20week,%20Joe%20requested%20that%20I%20make%20two%20types%20of%20chili%20for%20game%20day:%20%20Black%20Bean%20and%20Sweet%20Potato%20Chili%20and%20Chipotle%20Turkey%20Chili%20in%20addition%20to%20a%20batch%20of%20enchiladas.%20%20I%20made%202%20boxes%20of%20Jiffy%20cornbread%20and%20some%20rice%20to%20serve%20along%20with%20the%20chili.%20%20Our%20friends%20brought%20wings%20from%20our%20favorite%20local%20place%20and%20some%20homemade%20deviled%20eggs%20(Joe's%20favorite).%3C/p%3E%3Cp%3EChipotle%20Turkey%20ChiliWe%20also%20snacked%20on%20a%20veggie%20tray%20and%20some%20chips%20and%20dip.%20%20Dessert%20was%20a%20store-bought%20ice%20cream%20cake%20and%20some%20S'mores%20Bars%20that%20I%20made%20following%20a%20recipe%20that%20I%20saw%20on%20Jennifer's%20blog,%20Home%20Matters.%3C/p%3E%3Cp%3ES'mores%20Bars%EF%BB%BF%EF%BB%BF%EF%BB%BF%3C/p%3E%3Cp%3EGrace%20really%20enjoyed%20having%20guests%20for%20dinner%20and%20even%20watched%20a%20bit%20of%20the%20game!%3C/p%3E%3Cp%3EPaying%20close%20attention%20to%20the%20game!%20%20%EF%BB%BF%EF%BB%BF%3C/p%3E%3Cp%3ESince%20I%20made%20too%20much%20food,%20this%20week%20will%20be%20all%20about%20the%20leftovers!%20%20Not%20only%20will%20that%20make%20it%20an%20easy%20week%20for%20me,%20it%20should%20also%20keep%20us%20from%20the%20grocery%20store%20this%20week!%3C/p%3E%3Cp%3EMonday:%20%20Black%20Bean%20&%20Sweet%20Potato%20Chili%20over%20cornbread,%20fresh%20carrot%20sticks%20and%20ranch%20dressing.%20%20I%20love%20having%20veggies%20leftover%20when%20I%20make%20a%20vegetable%20tray.%20%20It%20makes%20it%20so%20much%20easier%20to%20make%20a%20healthy%20snack%20or%20side-dish%20decision%20when%20they%20are%20prepped%20and%20ready%20for%20eating!%3C/p%3E%3Cp%3ETuesday:%20%20Breakfast%20for%20Dinner.%20%20Sausage,%20eggs%20and%20hashbrown%20casserole.%20%20We%20never%20got%20around%20the%20the%20breakfast%20for%20dinner%20that%20I%20scheduled%20last%20week.%20%20Since%20I%20already%20shredded%20the%20cheese%20for%20the%20hashbrown%20casserole,%20we%20need%20to%20make%20that%20this%20week.%20%20Not%20a%20problem%20since%20we%20LOVE%20it!%3C/p%3E%3Cp%3EWednesday:%20%20Spaghetti,%20meatballs,%20garlic%20bread.%20%20Last%20week,%20I%20found%20myself%20needing%20something%20quick%20for%20dinner%20after%20an%20afternoon%20out%20with%20my%20parents.%20%20I%20found%20some%20frozen%20meatballs%20in%20the%20freezer,%20threw%20them%20in%20the%20crock%20pot%20with%20some%20sauce%20and%20had%20meatball%20sandwiches%20for%20dinner.%20%20We%20still%20have%20some%20leftover%20meatballs,%20so%20boil%20up%20some%20pasta%20%20and%20hopefully%20finish%20up%20those%20meatballs.%3C/p%3E%3Cp%3EThursday:%20%20Chipotle%20Turkey%20Chili%20over%20rice.%20%20Mmmm!%20%20My%20favorite!%20%20I%20could%20eat%20this%20every%20night%20of%20the%20week%20and%20never%20be%20tired%20of%20it!%20%20But%20instead,%20whatever%20is%20left%20of%20this%20chili%20after%20this%20meal,%20will%20go%20into%20the%20freezer%20for%20another%20week.%3C/p%3E%3Cp%3EFriday:%20%20Hot%20dogs,%20Our%20Favorite%20Baked%20Beans,%20baked%20potatoes.%20%20There%20was%20a%20sale%20on%20potatoes%20last%20week.%20%20I'm%20going%20to%20make%20some%20potato%20soup%20with%205lbs%20of%20the%20potatoes%20and%20the%20rest%20will%20be%20for%20side%20dishes%20(mashed,%20baked,%20fried).%3C/p%3E%3Cp%3ESaturday:%20%20leftover%20buffet.%20%20If%20we%20somehow%20manage%20to%20finish%20all%20of%20the%20leftovers%20by%20Saturday,%20then%20I%20will%20make%20some%20Tuna%20Noodle%20Casserole%20(another%20meal%20carried%20over%20from%20last%20week).%3C/p%3E%3Cp%3ESunday:%20%20Chinese%20food%20is%20our%20usual%20go-to%20take%20out%20for%20special%20occasions.%20%20Since%20Valentine's%20Day%20is%20on%20Monday,%20we'll%20most%20likely%20%22celebrate%22%20on%20Sunday.%20%20It's%20been%20a%20few%20months%20since%20we've%20ordered%20Chinese.....I%20wonder%20what%20I'll%20choose!%20%20I'm%20also%20thinking%20of%20picking%20up%20a%20few%20Red%20Velvet%20Cupcakes%20for%20dessert%20from%20a%20cute%20little%20place%20in%20our%20town.%20%20I've%20been%20wanting%20an%20excuse%20to%20check%20it%20out%20since%20it's%20opened%20recently.%3C/p%3E){kind=link}
