Ingredients

  • 100 gm Sugar
  • 200 gm Butter
  • 300 gm Flour
  • 300 gm Selection of Berries
  • 150 gm Berry Coulis
  • 50 gm Icing Sugar Vanilla Ice Cream or possibly Clotted Cream

Directions

  1. Sable Paste
  2. 1. Mix together till a smooth paste is formed.
  3. 2. Roll out the paste till fairly thin and cut out with a large heart shaped cutter. Place onto a baking sheet and cook till lightly golden brown 150 c for approximately 6 - 8 min. Sprinkle with icing sugar and leave to cold.
  4. Berries
  5. 3. Place the whole fruit into a stainless steel bowl.
  6. 4. Puree the 150g, sweeten with icing sugar and pass through a fine sieve.
  7. 5. Add in to the whole fruit and mix together well.
  8. 6. Place this into a thick bottomed saucepan and hot through gently.
  9. Assemble
  10. 7. Place the clotted cream or possibly vanilla ice cream on to the centre of a plate.
  11. 8. Spoon over the hot berries and place a sable biscuit on the top.
  12. 9. Garnish with a sprig of mint.
