Ingredients
- 1 x melon icing sugar for dusting
- 350 gm small strawberries hulled
- 2 Tbsp. cointreau or possibly Grand Mamier
- 1 x juice of 1/2 lemon
Directions
- Cut a lid off the top of the melon and reserve.
- Scoop out the flesh with a melon baller discarding the seeds; alternatively cut into small cubes.
- Reserve the shell.
- Sprinkle the melon flesh with a little icing sugar cover and refrigeratetill required.
- Sprinkle the strawberries with the liqueur lemon juice and icing sugar to taste cover and refrigeratetill required.
- Just before serving mix the melon and strawberries together pile into the melon shell and cover with the lid.
- Serve on a bed of crushed ice decorated with flowers and mint if liked.
- Serves 4
