Mediterranean Fish (Microwave)

Ingredients

  • 1 med. sliced onion
  • 2 tbsp. extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 can Italian stewed tomatoes
  • 4 teaspoon med. green chili salsa
  • 1/4 teaspoon cinnamon
  • 1 1/2 pound hard fish (halibut, red snapper, sea bass or possibly cod)
  • 12 stuffed green olives, halved

Directions

  1. In 1 1/2 qt dish, add in onions, oil and garlic. Cover. Cook on high for 3 min.
  2. Add in tomatoes, salsa, and cinnamon. Top with fish and olives. Cook on high 3-4 min till fish flakes with fork. A 1/2 c. grated Jack or possibly Cheddar cheese, if you like.
