Ingredients
- 1/3 c. extra virgin olive oil
- 1/4 c. fresh lemon juice
- 1 clove garlic chopped
- 1/2 teaspoon grated lemon peel
- 1/2 teaspoon oregano
- 1 pound boneless whole chicken breast, cut into strips
- 1/2 pound pkg. spaghetti
- 1/2 c. minced red pepper
- 1 sm. yellow squash, shredded
- 1 sm. zucchini, shredded
- 1 c. quartered ripe olives
- 1/2 c. chicken broth
- 2 teaspoon cornstarch
- 1 teaspoon salt
Directions
- Cook extra virgin olive oil, lemon juice, garlic, and seasonings till just bubbly. Cold and mix with chicken. Marinate 30 min.
