Ingredients

  • 2 x 4 ounce medallions of beef tenderloin
  • 1 Tbsp. Butter
  • 1 Tbsp. Finely minced onion
  • 1 ounce Brandy, (optional)
  • 3 ounce Beef gravy or possibly brown sauce
  • 1 Tbsp. Blue cheese, (softened) (Maytag blue cheese) Salt and pepper to taste
  • 1 Tbsp. Green onion sliced for garnishing
  • 2 Tbsp. Blue cheese for garnishing

Directions

  1. Heat butter in saucepan. Saute/fry beef medallions to desired doneness. Remove meat to a hot place. Add in minced onion to pan and flambe with brandy. Add in brown sauce to pan and stir. Add in blue cheese and whip til smooth. Season with salt and pepper. Pour sauce on plate, place meat over sauce. Garnish the top of each medallion with green onion and crumbled blue cheese.
